You can make a delicious snickerdoodle cake using my vanilla cake recipe. It is filled with buttery cinnamon swirls and topped off with creamy brown sugar cinnamon buttercream frosting. This cinnamon cake is a classic. Everyone loved it!

Snickerdoodle Cake Power Ingredients

It is a long list. The ingredients are almost always repeated in each section, but that’s good. You may have tried my best vanilla cake recipe or read about it.

Butter: Use room-temperature butter to make the frosting and Cake. Room-temperature butter can be colder than you might think. For the cinnamon swirl, use melted butter.

Cake flour: Cake flour is your secret for a soft, bakery-style cake with a light texture. All-purpose flour will make the Cake heavy. You can substitute cake flour if you need it.

Eggs and two additional egg whites: 3 eggs give structure, moisture, richness, and richness. The Cake is lightened and fluffy with two other egg whites.

Baking Powder and Baking Soda: Do you know the difference between baking powder and baking soda? Why is it important to use both? We will use enough baking powder for the Cake to be tall without leaving behind a bitter aftertaste. Baking soda makes it possible to use less baking powder.

Buttermilk is an acidic component, and baking soda needs an acid to work. Buttermilk also makes a moist crumb. Refer to the recipe note for an alternative.

Brown Sugar In the cinnamon swirl, we’ll use brown sugar in the frosting. You can use either light brown or dark brown sugar for bolder flavors. I prefer dark brown sugar.

Cinnamon -Cinnamon will be the prominent flavor. Make sure to use a high-quality product. McCormick and Penzeys are my favorite brands. (Not sponsored, just super fan!)

How to Make Snickerdoodle Cookies

Prepare the cake batter. Use basic creaming. For more information, please see my vanilla cake recipe. Because we are adding a cinnamon sugar swirl to the cake batter, I have reduced the sugar.

Create the cinnamon swirl. Mix brown sugar, flour, and cinnamon. Add the melted butter to the bowl. Use a spoonful to cover each layer of unbaked Cake. Then, use a knife to swirl the mixture. As the cake bakes, the cinnamon swirl will sink slightly. This is normal. The cinnamon swirl bits are sticky and chewy when you eat the Cake.

Bake and cool the cakes: Bake until a toothpick inserted into the middle comes clean. Let cool completely before assembling the frosting.

Decorate the Cake: I like a semi-naked decoration on this snickerdoodle dessert.

Allow the decorated Cake to chill for 30-60 minutes before you serve it. This helps to make slicing more accessible and precise.
